Tasting Notes
Rich and sweet, herbaceous, biscuity, grassy and spicy, with an indulgent creamy texture.
Nose: Baked vanilla cheesecake, rhubarb and custard, fruit salad sweets, strawberry laces, wood glue, watermelon, apple pie.
Palate: White chocolate, cassia, celery, vanilla extract, kashmiri chilli, tamarind, rose, malted milk biscuits, hay, oolong tea.
Finish: Delicate liquorice, baking spices, fresh cut grass, icing sugar.
Wire Works Heritage Chevallier is the very first unpeated single malt release bottled at White Peak Distillery and a release which explores flavour and heritage; not only through place and process, but also through grain — returning to an ancient English barley variety that once helped shape the flavours of British beer and whisky.
Chevallier is a heritage barley variety that was dominant in England from the 1820’s to 1920’s. Superceded in the modern pursuit of yield, Chevallier has a unique flavour profile that we wanted to explore in our early years of distilling; robust maltiness with a rich marmalade character.
The initial new make was amazing and after years in ex-bourbon barrels we’re excited to offer one of the first, contemporary era whiskies made from Chevallier malt. Matured entirely in first-fill ex-bourbon casks to allow the character of the barley to shine, this whisky is rich and sweet, with herbaceous, biscuity, grassy and gently spicy notes, all wrapped in an indulgent, creamy texture.
